Costco finally started carrying crab meat again. My mom has an amazing recipe for crab cakes that is SO incredibly easy. She uses the lump crab meat from Costco and it is so much better than canned crab and cheaper than buying it from the store (about $17 a pound at Costco v.s $30 a pound at the store).
I decided to make these for dinner last night. They turned out well and only took about 30 minutes to prep and cook. I used a Barefoot Contessa recipe for green beans and made a sweet chili aioli sauce to go along with the crab cakes.
Crab Cakes with Sweet Chili Aioli:
1 lb lump crab meat
1/3 cup bread crumbs
2 tablespoons red bell pepper (finely chopped)
2 tablespoons yellow bell pepper (finely chopped)
1 tablespoon celery (finely chopped)
2 tablespoons red onion (finely chopped)
1/2 tablespoon jalapeño (finely chopped)
1/4 cup mayonnaise
1/2 teaspoon worchestire sauce
1/2 teaspoon tabasco sauce
Mix crab and bread crumbs in a large bowl and set aside. Turn on broiler.
Mix in red and yellow pepper, celery, red onion, jalapeño, egg, mayo, worchestire sauce and tabasco.
Form crab cakes on cookie sheet and brush with melted butter. Broil until golden brown, about 5 minutes.
Sweet Chili Aioli:
1/3 cup mayo
4 teaspoons sweet chili sauce
2 teaspoon lemon juice
1/2 teaspoon cold water
1/2 pound green beans
2 tablespoons shallots (finely chopped)
Melt 3 tablespoons of butter and about 2 tablespoons of EVOO in a pan. Place shallots into pan and cook until brown. Place washed green beans in a gallon Ziploc bag with holes (puncture with knife) in microwave for 45 seconds. When butter and EVOO are hot, place green beans in pan and cook for about 15 minutes. Add kosher salt and pepper to taste.
(Yes that is an ice cube in my wine. Don't judge me)
